PROTEIN MACAROONS & PUMPKIN COOKIES
I love anything coconut and recently I have been baking the same types of cookies. Today I decided to try a coconut style cookie aka Macaroons! I also made pumpkin spice cookies to bring to my coworkers. Recipes below: Protein Macaroons Pre Heat oven 350 degrees In a food processor blend: -1 cup oats -2 cups shredded coconut (you can use sweetened or unsweetened) -If you use unsweetened coconut,add 2 tbsp sugar, splenda or sweetener of choice -1 scoop Vanilla protein powder -1 1/2 tbsp Almond extract -1 tbsp coconut oil -1/2 c soy milk -1 tsp baking powder – I used 1/4 cup sliced almonds as well Blend all in food processor I had to add some water to get it to the correct consistency You want to consistency to be similar to cookie dough, a little more wet Spoon out “blobs” onto a baking pan Bake for 10 min. After “blobs” are cooled down a bit melt chocolate chips or dark chocolate chips in the microwave I spooned out small amounts of the melted chocolate and spread it on top! Pumpkin Cookies: Preheat over 350 degrees -2 cups Oats -1 Can Pure Pumpkin -2 scoops Vanilla protein powder -1 tbsp baking powder -1tbsp Vanilla extract -1 1/2 tbsp cinnamon -1 tbsp pumpkin pie spice -3 tbsp chocolate chips -1/2 cup soy milk -water to get correct consistency (think watery cookie dough) Scoop onto pans and bake for 12-15 minutes Enjoy!
